Fermentation is not so much a culinary technique as it is a relationship, bringing us closer to our food and the living world around us. It has allowed the human race to survive and thrive throughout history. The process of fermentation unlocks and multiplies the nutrition of our foods giving nourishment to our bodies, while also lifting our spirits with new unique and complex flavors. The microbes living in our bodies, and in fermented foods, are essential to maintaining a healthy body and mind. Many factors in our modern environment are constantly assaulting our microbial communities in, on, and around our bodies: making it more important now than ever to fortify our micro-biomes by exposing ourselves to a variety of fermented products.

It is critical for us to learn how to provide ourselves with living, probiotic rich foods. Doing it yourself can be shockingly simple. Fermented products that you make at home are infinitely more beneficial to your health than the sauerkraut, kombucha, or probiotic capsules you will find commercially available.

During this class we will discuss the fascinating processes that define fermented foods as well as how incorporating these products into our diet is essential to our overall health. You will learn everything you need to know in order to have the confidence to dive into the world of fermentation for yourself. We will cover techniques used to yield a variety of tasty probiotic-rich foods. As a group we will creatively craft our own personalized fermented foods and beverages for you to take home including sauerkraut, kimchi, lacto-pickled vegetables, kombucha, natural sodas, and condiments. Bringing these home will allow you to experience the slow transformation taking place with your own eyes and tastebuds. We can even send you home with starter cultures for sourdough bread and yogurt. (This short course will not allow us to make these together, but you will have the opportunity to taste them!) It is our hope that this experience will encourage you to reclaim these celebrated traditions of our ancestors and apply them in your life.
